In case you haven't noticed on our Instagram/Facebook, we've been eating mostly greens for St Patrick's Day. And lucky for you, these are a treat anybunny can enjoy.
These were super quick to make and required just a few dishes, so clean up time was a breeze. That way we could get our paws on one of these sooner than later.
1 1/2 cups of coconut flakes
1/4 cup of date syrup
1/3 coconut cream
2 tbs of coconut oil
1 tbs + 1 tsp of lime juice
1 tsp matcha powder
Vegan graham crackers
1. Combine coconut flakes, date syrup, coconut cream, coconut oil, lime juice, and matcha powder in a bowl and mix until everything is well combined.
2. Form the mixture into desired form, place on parchment paper and put in freezer for 15 minutes.
3. Melt the chocolate, remove bars from freezer and roll them in chocolate. Place back on parchment paper. Garnish with crushed graham crackers, pistachios, and lemon zest, place back in freezer for a few minutes and enjoy.
