Fajita Skewers

If you follow us on Instagram you have probably noticed we don't play with tofu too much. Now we know there's two sides to every team.. And with tofu you either love it or hate it. We use to be on team hate after trying it a few times from restaurants where it tasted like (insert bad word of choice here) but recently we switched teams after preparing it ourselves at home. To be honest we're having it at least once a week now. Last night we made a tofu dinner that was not only a total home run it made our house smell so good to the point we think even the bunnies were starting to drool. Our Tofu Fajita Skewers were making us all do the happy dance in the kitchen, and let's not forget the amazing chimichurri sauce that we made too. So come on and throw on an apron and those dancing shoes it's fiesta night in the kitchen.

 

 

 

Savory

Herbaceous 

Tangy

And just the right amount of heat

 

 

Ingredients:

 

For the tofu and veggie seasoning:

 

2 tsp of chili powder

1 tsp of cumin

1/2 tsp of dried oregano

1/2 tsp of garlic powder

1/4 tsp of onion powder

1/2 tsp of pink Himalayan salt

1/2 tsp of black pepper

Sprinkle of cayenne

2 tbs of grape seed oil 

 

14 oz of cubed firm tofu (if you're on team hate for tofu we recommend switching with seitan or mushrooms)

1/2 of a yellow bell pepper cut into large pieces

1/2 of a green bell pepper cut into large pieces

1/2 of a red bell pepper cut into large pieces

1/2 of a red onion pepper cut into large pieces

 

 

For the chimichurri sauce:

 

1/4 cup of fresh cilantro 

1/4 cup of fresh parsley

1 sprig of green onion

1 clove of garlic

Juice of one lime

3 tbs of grape seed oil

1 tbs of apple cider vinegar

Sprinkle of cayenne 

 

 

Directions:

 

1. In a large bowl combine all seasonings well and add oil. Stir well and add tofu and veggies. With your hands gently toss veggies and tofu in bowl until all components are well coated in marinade. Set aside.

2. Preheat oven to 400°F. In a food processor combine all ingredients for chimichurri sauce. Blend until smooth and set aside.

3. Begin to assemble skewers with veggies followed by tofu. Repeat process until finished. Place skewers onto parchment paper on a baking sheet and bake for 20 minutes each side.

4. Once time is up remove from oven and transfer to a large plate. Garnish with fresh squeezed lime, chimichuri sauce, and fresh cilantro. Enjoy!

 

P.s this made 4 unbelievably good skewers. These are also great wrapped in a tortilla with fresh greens and tomatoes.
