Teriyaki Tofu Skewers

The Chinese food craving were real the other day! After a little brainstorming we decided to veganize an old Chinese takeout classic, Teriyaki Beef Skewers. Since we've been having a craving for tofu as well it was our first choice to replace beef and to drench it in a sweet, salty, sour, and tangy, homemade teriyaki glaze. Oh and we didn't stop there we went ahead and whipped up a pineapple sweet and sour sauce that was to die for. Served up with some white rice and blanched broccoli. We were hoppin' like happy buns in the kitchen to celebrate such a meal. So if your craving some Chinese take-out, let's get in the kitchen for some fresh and easy to make take-in.

For the skewers:

14oz of extra firm  tofu

1/4 cup of soy sauce

1/4 cup of filtered water 

2 tbs of rice vinager

2 tsp of raw cane sugar

2 tsp garlic powder

1 tsp ginger powder

1 tsp of tapioca starch 

 

For the sweet and sour sauce:

 1/4 cup of fresh blended pineapple

2 tbs of rice vinegar

1 tbs of raw cane sugar

1 tbs of ketchup

1 tbs of agave syrup

1 tsp of soy sauce

 

 

Directions

1. Press tofu in between to plates gently to squeeze out excess moisture and drain. Cut tofu into long thin slices and set aside. 

2. In small pot on medium heat combine soy sauce, water, vinegar, sugar, ginger, and garlic powder. Mix well and let simmer for a few minutes then dip tofu strips into sauce and place back onto dish. 

3. In a small bowl mix tapioca starch with about 1 tbs of filtered water and slowly mix into simmering sauce. Mix well and let simmer for a few more minutes allowing sauce to thicken into glaze.

4. Preheat oven to 400 F. Grab skewers and tofu. Dip tofu slices into glaze, coat well, and gently thread onto skewers. Place in oven for 40 minutes flipping and reglazing halfway through.

5. For sweet and sour sauce simply combine all ingredients into blender and blending until combined. Once skewers are ready remove from oven and serve with rice (we seasoned ours with rice vinegar an sesame oil) and broccoli. Garnish with sesame seeds and green onipn. Enjoy!
